White Chocolate Peppermint Cookies

Please Note:  If you are interested in tasting these cookies, six dozen will be available for purchase as the Lake Country CASA Cookie Walk starting at 8 a.m. this morning at the First United Methodist Church in Sulphur Springs, Texas.  Cookies are $5 a pound, in support of a very worthy organization!

These cookies are delicious!  A hint of mint and the vanilla taste of the white chocolate chips combine into a very merry cookie!

I found this recipe on Food.com.  It is so easy that I actually memorized it!  All you need is butter, white and brown sugars, vanilla, an egg, baking soda, salt, flour, peppermints, and white chocolate chips.

As most of us do, I altered the recipe a bit.  I used dark brown sugar instead of light.  I had lots of almond bark, so I chopped it up instead of using the white chocolate chips. These changes turned out fine.

The recipe calls for a half cup of peppermint chips.  It says it takes about 50 of the small candy canes to make a half cup.  For me, it only took 25 small candy canes to make a cup, so you may want to measure as your go along.

To make the peppermint chips, I put the candy canes in a ziplock freezer bag and used my rolling-pin to break the canes into chips (and get out any aggression I was feeling).

The longer you bake the cookies the crunchier they will be.  So, if you want them crunchy, go a minute or two longer than 12 minutes.  Also, if you have candy chips on the edge, they will run a bit.  As soon as you take the pan out of the oven, use a spatula to push the melted sugar back into shape or divide any cookies that ran together.

How does the cookie walk work?  You are given a takeout container that you get to fill with the cookies you want to eat (or share).  At check-out, they weight your cookies.  You pay $5 per pound.  Some cookies are decorated cutout cookies, some are drop cookies and some are edible works of art.  There are also some cakes and gift baskets available for purchase as well.
