Roasted Grapes

I know what you are thinking and before you say it, have you tried roasted grapes?  They are actually quite good.  They soften, get sweeter and juicier.  On the plate, they add a pleasing color and something different than the normal green beans and mashed potatoes.

The other bonus is that they are really easy to make!  All you need is:

Grapes (as many or few as you want to eat)
Olive oil
Salt and pepper

Preheat the oven to 350 degrees.

Wash and dry the grapes.  Remove them from the vine.  Place the clean grapes on a Silpat or foil lined baking sheet.

The amount of olive oil you use will depend on the number of grapes you are cooking.  For a cup of grapes, a teaspoon of olive oil will be enough.  Just sprinkle the olive oil over the grapes.  Add a dash of salt and pepper.  Then roll the grapes around in the oil so that all of the grapes have a little bit on them.  You do not need pools of olive oil on the Silpat or foil.

Put the grapes in the oven for about 10 to 15 minutes.  They will soften and split, which releases some of the juice.  I like my grapes a bit more on the firm side, although the ones I photographed are very soft.

These are really good, and kiddos will love them!

    1. Kristi, please let me know how you like it. Living in a small town, I don’t always have access to a wide variety of vegetables. Roasted grapes is something a little different!
