Peas with Pearl Onions and Ham

Yummy is the only word to describe this dish!  Of course, the creaminess of the peas combined with the salty ham and onions make it divine!  And, it is so easy to make.

You will need:

4 oz. of gold pearl onions
1 Tbsp unsalted butter
1/2 cup cubes of pre-cooked ham (I use a slice from a spiral cut ham – you could also use bacon)
15 oz. can sweet peas, drained, or 12 oz. frozen sweet peas

To peel the onions, put them in a pot of boiling water.  Boil for 1 minutes.  Remove them and immediately put them into a bowl of cold water.  Let them sit for a few minutes.  Cut the ends off and squeeze the onion out of the peel.

In a saucepan, put the onions, butter and 1 tablespoon  of water over medium heat.  Let them heat for about five minutes.

Add the ham.  Put the lid on and continue to cook, stirring occasionally and checking to make sure they don’t boil dry.  Cook until tender.

After a few minutes of cooking, add the ham.

Add the peas.  At this point, you are just trying to heat the peas, so heat for another three minutes or until hot.  Add a dash of pepper and a very small dash of salt.

This is so very delicious!  I caught my husband having a last spoonful from the pan after dinner.  I am serving this at Easter, for sure!
