This is my new favorite salad. It is so easy to make and so good. And you have options to use what you like or have on hand as ingredients.
You will need:
Dried cranberries (or raisin or craisins)
Feta cheese, plain
Honey roasted almonds (or pecans or walnuts – plain or candied)
Springs Mix Lettuce or any greens you like
Optional, grilled chicken or cooked shrimp
Girard’s Champagne Dressing (I love this stuff)
So wash your greens, pat dry, and chop up any large pieces. Lay your greens out on your plate. Add as much of the fun stuff as you like (feta, nuts, cranberries, and optional protein). Then top off with the Champagne dressing and you will LOVE your salad. Trust me!
Bonus information: I found the Girard’s Champagne dressing at my local grocery store, Brookshires. I have also been told it can be purchased at Braums.

Now that may make you think of green beer and guacamole, but this was a sophisticated crowd. Instead, each co host made 2… Read More
