You may have figured out that I like to cook, but I need fast and easy recipes to get me through the busy week.
As far as healthy eating goes, there is nothing worse than getting through the day without a plan. That is when disaster strikes.
This fruit salad recipe is great in an emergency, but also tasty enough to serve at a brunch or at a pot luck, and people tend to love it! I always keep a can of mandarin oranges on hand and then add in whatever fresh fruits I have available.
You will need:
1 can mandarin oranges, size depends on how many you need to serve (this is the secret)
1 fresh apple, cored and cut into bite size pieces
1 banana, peeled and sliced into bite size pieces
½ cup of blueberries or strawberries
1 lemon
In a medium sized serving bowl, empty the can of mandarin oranges and juice. Add the apples, banana and blueberries or strawberries.
Cut the lemon in half and squeeze the juice over the mixture. Spoon the liquid in the bowl over all the fruit, mixing the fruit and juice as you go.
You can add other fresh fruits to the mix as well. In the photo above, you will notice that I added pineapple, cantaloupe, and both strawberries and blueberries as well as the apple, banana and mandarin oranges.
The key is in using the liquid from the can of mandarin oranges and adding lemon juice. Not only does the juice help to slow down the oxidization, but it also adds a nice flavor to the salad. Enjoy!
