Greek Couscous Salad

Do you ever read the recipes on food product packaging? I have been introduced to some great, new dishes by trying out these recipes.

This week, I needed one cup of cooked couscous for a Italian shrimp, bean and couscous salad. I went ahead and made the entire package. With the remaining portion I made this Greek Couscous Salad from the back of the Near East box of couscous. It had lemon juice, olive oil, fresh basil, tomatoes, feta cheese and couscous. I found the proportions weren’t that exacting. I added the juice of two lemons because I like that bright flavor.

So here is to reading the back of packages and eating some great food!
