This is another of my dear Aunt E’s wonderful, but simple, recipes. Great for a working family on a weeknight. As a child, I ate it, never questioning the peas. I think your children will enjoy it as much as I did.
For this salad, you will need:
1 can (15 ozs) of English or sweet peas, drained
1/4 cup chopped onion, yellow or white
1/2 cup mild cheddar cheese, cubed in 1/4 inch squares
1/4 cup mayonnaise
Salt and pepper to taste
Combine the ingredients and chill for half an hour or more before serving. Delicious!
This recipe brings back lots of memories. This pea salad served with a thin slice of ham on Sunday after church takes me back to wonderful times with my family when I was growing up. I hope this recipe becomes a staple for your family meals.
