My Aunt E used to serve this casserole, and it was delicious. She served it as a starch along with a vegetable and protein. Easy to make and a great accompaniment to chicken, ham or beef. A bit old school, with its use of cream of mushroom soup, but choose the healthy version and you won’t feel so guilty.
It is equally as good served fresh as it is leftover, but I doubt you will get the chance to try it as a leftover because it will all be gone!
You will need:
2 15.5 oz. cans of hominy (yellow or white), drained
10.5 oz. can of cream of mushroom soup, healthy recipe
1/4 cup finely chopped onion (yellow or white)
1/3 cup Pace Picante Sauce, I like mild, but use your favorite
3/4 cup, shredded cheddar cheese, divided
Mix the first four ingredients in a casserole dish (an 8 x 8 inch Pyrex dish or oven proof decorative dish will work). Add 1/4 cup of the cheese to the mixture. Bake at 350 degrees for 25 minutes until heated through. Top with the remaining 1/2 cup of cheese and return to the oven for 5 minutes.
Enjoy while it is hot.
Bonus Information: Unsure of hominy? Hominy is available in a can in the vegetable aisle of your local grocery store. It is corn, which has been dried and then soaked in a mineral bath. It looks like a swollen corn kernel; it is softer in texture and milder in flavor than corn.
