While on vacation in Utah, Mike and I had roasted artichoke and smoked feta dip served with fresh vegetables and chips at the Stein Eriksen Lodge. It was a hearty platter that included what looked like bright green little Christmas trees.
The little bright green trees were actually fresh pieces of a vegetable called romanesco. It is a mix between broccoli and cauliflower. To me it tastes more like cauliflower when raw and broccoli when cooked.
While at Krogers, I purchased a head. I used a recipe I found on Allrecipes.com, called Roasted Romanesco. It was really simple, cooked in 20 minutes and used ingredients that I already had on hand.
I like it! It can be served cooked or uncooked. It is a green vegetable, without being the traditional green beans, broccoli or spinach. And one of my favorite aspects is that it looks great on the plate! I think it will be perfect for holiday entertaining since it looks a bit like Dr. Seuss Christmas trees.
