Who doesn’t love a tender, flavorful roasted chicken breast?  This recipe is fast, easy and delicious. The addition of the surprise inside adds a nice smoky flavor to the final forkful.

To make my Surprise Inside Roasted Chicken, you will need:

4 boneless, skinless chicken breasts, defrosted and rinsed.  I like to use Purdue’s Harvestland individually wrapped chicken breasts.
2 apple smoked bacon slices
4 slices of smoked gouda
Olive oil or pecan oil
Salt and pepper

Preheat the oven to 450 degrees.  Line a baking sheet with foil or a silicon baking mat (click here to learn more).

Place the rinsed breasts on the baking mat.  Add salt and pepper and drizzle with a teaspoon of oil per breast (I used pecan oil).  Turn and repeat the salt, pepper and oil on the other side of the breasts.  Place 1/2 slice of bacon on each breast.

Bake for 20 minutes, turning the baking sheet around after 10 minutes.

After 20 minutes, remove and add a slice of gouda over the bacon.  Bake for an additional 3 to 5 minutes until gouda is heated and melted.

Serve immediately.  The smoky flavor of the gouda and bacon makes this 25 minute recipe taste like you spent the afternoon in the kitchen.  It is flavorful and fast!  Every working person’s dream!

Alternatives:

  1.  Parmesan and prosciutto
  2. Mozzarella and summer sausage slices
  3. Swiss and ham slices
  4. Feta crumbles and spinach leaves  (add the spinach at the same time as the cheese).
  5. Italian fontina and onion slices (add the onions 10 minutes into the chicken cooking time).
