Easy French Chicken

Oui!  Oui!  I love to have a variety of quick and easy chicken dishes in my arsenal for week night dinners.

This is so easy that you will want to make it each week!  Steamed haricot vert (French green beens) or a salad are all you need to make this dish fast and healthy!

My favorite go-to ingredient in many weeknight dishes is the individually packaged frozen chicken breasts by Purdue’s Harvestland.  Cook one or five, just adjust your ingredients as needed.

To make my French Chicken, you will need:

4 (or how ever many you need) chicken breasts, thawed
Olive oil
Herbes de Provence
Salt and pepper

Preheat the oven to 450 degrees.  Line a baking sheet with a Silpat or foil.  Drizzle about a tablespoon of olive oil per chicken breast on the Silpat/foil.  Place the breasts on the oil, turning to coat both sides.

Dust each breast with one-half teaspoon of herbes de Provence on one side of each breast; then dash a bit of salt and pepper over the breasts, to taste.  Turn the breasts over and season the other side with one-half teaspoon with Herbes de Provence.  Repeat the salt and pepper.

Bake the breasts for 25 minutes or until done.
