Being an aficionado of all things easy, I came up with this recipe, which is very similar to my potato salad recipe. That way, I only have to remember one set of ingredients! Oh, yeah, it is tasty too!
You will need:
A rotisserie chicken
1 cup sliced celery
1/3 cup chopped onion
1/3 cup chopped dill pickles
3 hard boiled eggs, chopped
1 cup, maybe more, mayonnaise or salad dressing
1 Tbsp prepared mustard
Seasoned salt to taste (about a half teaspoon)
Pepper to taste (about 1/4 teaspoon)
Dill to taste (about 1/2 teaspoon)
Remove the meat from the chicken and loosely chop. Place it in a bowl, and add celery, onion, pickles, eggs, mustard and 1 cup of the mayonnaise. Check consistency. You may need a bit more mayonnaise to get a consistency you like. Add 1/2 teaspoon seasoned salt or an amount you would like. Add 1/4 teaspoon pepper or an amount you would like. Add the dill.
This chicken salad is great on its own, in a sandwich, on top of a salad, and on crackers.
Bonus Information: For a new twist on this chicken salad recipe, add a half cup of dried cranberries. Yum!
