One of the easiest but most delicious recipes is basic herbed potatoes. They are a perfect as a side for a steak, rotisserie chicken or pork chop.
There are pricey spice packets you can buy for this purpose, but why not make your own with ingredients you probably already have on hand?
To make my herbed potatoes, you will need the following:
Potatoes-I like the small fingerling or baby potatoes; for this recipe I used 2 cups of baby potatoes.
Olive oil
Herbs and spices:
1/2 tsp Lawry Seasoned Salt
1/2 tsp garlic powder
1 tsp dried parsley
1/4 tsp paprika
1/8 tsp pepper
Wash potatoes. If using regular sized baking potatoes, peel and cut them into 1” cubes. If using fingerling or baby potatoes, there is no need to peel them.
In a small bowl combine the herbs and spices. Add 1/4 cup of olive oil.
In the middle of a baking sheet lined with foil or a silicone baking mat, put the herbed olive oil. Add the potatoes, rolling them in the oil until they are covered in oil.
Bake at 350 degrees until tender. For the small potatoes, about 30 minutes.
This is fast, easy and pretty healthy. Add a protein and a green vegetable and you have a great meal ahead of you. I am a bit addicted to these potatoes right now. I want them with every meal!

Bonus Information: If you are making a larger batch of potatoes, double the herbs and oil. If you find that you need a bit more oil to cover your potatoes, then just add a dash of oil.
