One of my favorite side dishes for chicken, pork and steaks is sauteed mushrooms and onions.  It is easy to make, decently healthy and doesn’t take much time to prepare.

For some reason, mushrooms get a bad rap.  Folks say they have no flavor or the texture is weird.  These people may have tried canned mushrooms, but fresh mushrooms are a different story!  Even those who enjoy eating mushrooms forget to serve them.  Uncooked, they are great in a salad or with a dip.  Cooked, they are great on their own or joining in a pasta, casserole, or pizza.  There are so many possibilities!  Here is one of my favorite recipes that lets mushrooms be the star!

You will need:

8 oz. prewashed and sliced mushrooms
1/8 cup olive oil
1/2 cup sliced onions
1 teaspoon of unsalted butter
1/8 cup red wine
Salt and pepper

Heat the olive oil on medium heat in a medium sized skillet.  Once it is heated, add the mushrooms and onions.  Cook until the mushrooms have shrunk and the mushrooms and onion are tender, about 7 minutes, while stirring occasionally.

Add the butter, red wine and salt and pepper to taste, stirring to mix.  Heat for 1-2 minutes, til the sauce comes together.

There you have it, folks!  A Vitamin D packed side that looks good served on top or along side your protein.  Yum!  Leftovers are easily reheated and are just as good the second time around.  I hope you enjoy!
