Veggie Spaghetti II

I love a good vegetable pasta that is really easy and quick to make.  My earlier post of Veggie Pasta can be located here.  However, my latest creation is equally as good.  I considered calling it leftover veggie pasta because I used a lot of leftovers.

Depending on what you have hanging out in your fridge and pantry, you can alter this as you see fit.

To make my veggie pasta II, you will need:

Pasta.  I used a half box of shells.

Sauce.  I used about 6-8 ounces of Rao’s Homemade Sensitive Formula Marinara Sauce.

Cheese.  I used 1/4 cup shredded Mozzarella and 1/8 cup chopped Parmesan.

Veggies.  I had a leftover small zucchini squash, which I cut in half lengthwise and then into 1/8 inch slices, so that it would cook quickly.  I also used about 4 ounces sliced button mushrooms and 1/4 of a yellow onion, thinly sliced.

Seasonings.  You will need salt, pepper, olive oil (I used basil flavored), butter, and Italian Seasoning (I used Zo-Bob’s Italian Olive in Dipping Mix).

Pep.  To liven up the already good flavor, add some sun-dried tomatoes and/or capers, then your flavor will be great.

To make this easy pasta dish, start by cooking your pasta according to directions.

Meanwhile, in a small non-stick skillet, heat two tablespoons of olive oil on medium heat.  Once heated, add the zucchini.  Dust with salt and pepper.  Stir so that oil coats all the squash.  Let it cook for about 5 minutes, then add the mushrooms and onion.  Add 1/2 tablespoon of butter and a teaspoon of Italian seasoning.  Stir to mix.  Put the lid on and let it cook until the veggies are tender, about eight more minutes, watching to make sure the veggies don’t scorch.

Add the sauce to the veggie skillet along with 1/4 cup pasta water.  If using capers or sun-dried tomatoes, add them now so they can heat along with the sauce.

When the pasta is finished, drain.  Add the veggies and sauce to the mix along with some cheese.  Taste to see if you need salt and pepper.

There you have it folks!  In less than 30 minutes, you have a healthy dish to share with your family.  I don’t think you could make it through the drive-through that fast!  It’s kind of like magic because it all disappears!
